Instructions

1
Set a 12-inch skillet over medium heat with half the neutral oil to warm for 2 minutes.
2
While it heats, stack the tortillas and cut them into thin 0.25-inch strips.
3
Fry the strips 3 to 4 minutes, stirring, until golden and crisp, then lift them onto a paper-towel-lined plate and sprinkle with a pinch of salt.
4
Toast the almonds and sesame seeds in the same skillet 2 minutes, stirring, until golden, then tip them beside the strips.
5
Pat the chicken breasts dry, season both sides with the remaining salt, and lay them in the skillet with tongs and a little more oil.
6
Cook undisturbed 6 minutes until golden underneath, then flip, cover, and cook over medium-low 6 to 8 minutes more, until the thickest part reads 165 F (74 C).
7
Meanwhile, grate the ginger into a large salad bowl and whisk in the rice vinegar, soy sauce, honey, sesame oil, and the rest of the neutral oil.
8
Thinly slice the napa cabbage and add it to the bowl with the matchstick carrots.
9
Thinly slice the green onions and roughly chop the cilantro leaves, then scatter both into the bowl.
10
Peel the orange, cut it into segments, and set them aside on the board.
11
Lift the cooked chicken onto a clean plate with a spatula and rest it 5 minutes.
12
Toss the salad with the dressing until every shred is glossy, then divide it between two wide bowls.
13
Slice the chicken thinly across the grain on the plate and arrange it over the salad with the orange segments.
14
Scatter the tortilla strips, almonds, and sesame seeds over the top and serve right away.
