Cashew Chicken & Bell Pepper Stir-Fry with Jasmine Rice
Ingredients Tap to check off
Instructions
1
Rinse the jasmine rice in a fine-mesh sieve until the water runs clear, then combine with water in a small saucepan over high heat.
2
While the rice water heats, seed the red bell pepper and green bell pepper, then cut both and the yellow onion into 1-inch pieces.
3
Once the rice reaches a rolling boil, stir once, cover tightly, reduce heat to low, and simmer undisturbed for 15 minutes, then pull off the heat to steam.
4
While the rice simmers, mince the garlic, peel and finely grate the ginger, and thinly slice the green onions, keeping separate piles.
5
Cut the chicken into 1-inch pieces and toss in a medium bowl with soy sauce and cornstarch until evenly coated.
6
Set a 12-inch skillet or wok over medium-high heat.
7
While the skillet heats for 2 minutes, whisk the remaining soy sauce, hoisin, rice vinegar, honey, cornstarch, and water in a small bowl until smooth.
8
Swirl the oil into the hot skillet and add the chicken in a single layer.
9
Sear undisturbed for 3 minutes until the undersides turn golden and release easily, then stir-fry 1 minute until the edges turn opaque.
10
Add the peppers and onion and stir-fry 3 minutes until the peppers turn glossy and tender-crisp and the onion edges soften.
11
Add the garlic and ginger and stir-fry 30 seconds until fragrant, taking care the garlic does not brown.
12
Stir the sauce, pour it in with the cashews, and toss 1 to 2 minutes until it bubbles into a glossy glaze and the chicken reaches 165 F.
13
Fluff the rice with a fork, spoon it onto plates, top with the cashew chicken, and scatter over the green onions.
