Thai Steak & Mango Salad with Lime Dressing & Peanuts
Ingredients Tap to check off
Instructions
1
Rinse the rice in a fine-mesh sieve, combine it with the water and salt in a small pot, cover, and bring to a boil over high heat.
2
While the water heats, thinly slice the napa cabbage and bell pepper, cut the cucumber into matchsticks, and pile everything into the large salad bowl with the carrots.
3
Once boiling, reduce the heat to low and simmer covered for 12 to 13 minutes until the water is absorbed and small steam holes dot the surface.
4
Peel the mango, slice the flesh off the pit, cut it into thin strips, and lay them over the vegetables without tossing.
5
Halve both limes and cut one half into wedges for serving.
6
Squeeze the other three lime halves into a small bowl, whisk in the fish sauce and honey, then peel the ginger and finely grate it and the garlic straight in.
7
Set a 12-inch skillet over medium-high heat.
8
While the skillet preheats for 2 to 3 minutes, pat the steak dry on a plate and season both sides with salt and pepper.
9
Add the oil to the hot skillet and lay in the steak once the oil shimmers and ripples.
10
Sear undisturbed for 4 to 5 minutes until a deep brown crust forms and the steak releases cleanly from the pan.
11
While the steak sears, roughly chop the peanuts and cilantro on the board and pick and tear the mint leaves.
12
Pull the rice pot off the heat and leave it covered to steam while the steak finishes.
13
Flip the steak and cook 3 to 4 minutes more until it feels springy when pressed, about 130 F for medium-rare.
14
Move the steak to the cutting board and rest for 5 minutes so the juices settle back through the meat.
15
Slice the rested steak very thinly across the grain, angling the knife to make wide, tender strips.
16
Just before serving, scatter the mint and cilantro over the salad, pour in the dressing, and toss until the cabbage glistens.
17
Fluff the rice and spoon it alongside the salad, then top with the steak, chopped peanuts, and lime wedges.
