Instructions

1
Adjust an oven rack to the middle position, line a large rimmed baking sheet with parchment, and preheat the oven to 425 F (220 C).
2
Peel the potatoes, cut them into 1.5-inch chunks, and add them to a medium pot.
3
Smash and peel the garlic, add it to the pot with some of the salt, and cover everything with cold water by an inch.
4
Bring the potatoes to a boil over high heat, then lower to a steady simmer for 15 minutes until a fork slides through easily.
5
While the water heats, trim the green beans and toss them on one half of the baking sheet with half the oil and a little salt.
6
Finely chop the rosemary leaves and whisk them with the maple syrup and Dijon in a small bowl.
7
Pat the turkey dry, rub it with the remaining oil, the remaining salt, and half the pepper, and lay it on the empty half of the sheet.
8
Pour half the glaze over the turkey straight from the bowl and roast on the middle rack for 10 minutes.
9
Pour the rest of the glaze over the turkey and roast 10 to 12 minutes more, until a thermometer in its thickest part reads 165 F (74 C) and the beans blister.
10
While the turkey finishes, drain the potatoes and garlic in a colander, then return them to the warm pot.
11
Add the butter, milk, and remaining pepper and mash until smooth and fluffy, about 2 minutes.
12
Let the turkey rest on the sheet for 5 minutes, then slice it into 0.5-inch slices with a clean knife.
13
Plate the mashed potatoes, green beans, and sliced turkey, and spoon the sticky pan glaze over the turkey.
