Instructions

1
Rinse the jasmine rice in a fine-mesh sieve until the water runs clear, then combine it with the water and salt in a small saucepan over high heat.
2
While the water heats, mince the garlic and grate the ginger, then whisk both into a small bowl with gochujang, soy sauce, honey and half the sesame oil.
3
Once the rice boils, cover tightly, reduce the heat to low and cook undisturbed for 12 minutes.
4
While the rice simmers, thinly slice the yellow onion, slice the carrot thinly on a bias, and cut the green onions into 2-inch lengths.
5
Thinly slice the cucumber into rounds and toss in a serving bowl with rice vinegar, the remaining salt and sesame oil, and half the sesame seeds.
6
Separate the lettuce into whole leaves, rinse them, and spin or pat dry before stacking on a plate.
7
Slice the pork chops across into thin strips about 1/8 inch thick, then toss them into the gochujang sauce until every piece is coated.
8
Set a 12-inch skillet over medium-high heat for 2 minutes.
9
Swirl in the vegetable oil, add the onion and carrot, and stir-fry 2 to 3 minutes until the onion edges turn translucent and the carrot brightens.
10
Scrape the pork and all its sauce into the skillet and spread it out, letting it sizzle undisturbed for 1 minute to catch some color.
11
Stir-fry 4 to 5 minutes until no pink remains and the sauce thickens into a sticky, brick-red glaze with caramelized edges on the pork.
12
Toss in the green onion lengths and cook 30 seconds until just wilted and bright green, then pull the skillet off the heat.
13
Fluff the rice with a fork and divide it between two plates alongside the pork, lettuce leaves and sesame cucumbers.
14
Scatter the remaining sesame seeds over the pork, then wrap spoonfuls of rice and pork in lettuce leaves to eat.
