Instructions

1
Rinse the jasmine rice in a fine-mesh sieve until the water runs clear, then combine with the water in a small saucepan over high heat.
2
While the water heats, peel the pear half and grate it on the fine side of a box grater into a medium mixing bowl.
3
Mince the garlic and peel and finely grate the ginger into the pear, then whisk in the soy sauce, half the sesame oil, and black pepper.
4
As soon as the rice boils, cover tightly, reduce heat to low, and cook undisturbed for 12 minutes.
5
Slice the flank steak across the grain into very thin strips, about 1/8 inch thick, angling the knife for wider pieces.
6
Toss the steak into the marinade until every strip is coated, then let it sit about 8 minutes while you prep the sides.
7
Peel the yellow onion half and thinly slice it into half-moons.
8
Thinly slice the cucumber into rounds and toss in a small bowl with the carrots, rice vinegar, salt, remaining sesame oil, and half the sesame seeds.
9
Thinly slice the green onions and set them aside for the finish.
10
Set a 12-inch skillet over high heat for 2 to 3 minutes until a drop of water skitters and vanishes.
11
Swirl in half the avocado oil, then lift half the steak from the marinade with tongs and spread it in one layer with half the onion.
12
Pull the rice off the heat and leave it covered to steam.
13
Sear the steak undisturbed for 90 seconds until the edges caramelize, then toss 1 minute until no pink remains and transfer to a plate.
14
Let the skillet reheat for 30 seconds, then repeat with the remaining oil, steak, and onion, searing and tossing the same way.
15
Return the first batch to the skillet, pour in the leftover marinade, and toss 1 minute until it bubbles into a glossy, sticky glaze.
16
Uncover the rice and fluff it gently with a fork.
17
Divide the rice between two bowls, pile on the bulgogi, spoon the cucumber salad alongside, and scatter with green onions and the remaining sesame seeds.
