Ingredients Tap to check off
Instructions
1
Rinse the rice in a fine-mesh sieve until the water runs clear, then combine with water in a small pot over high heat.
2
While the water heats, drain and rinse the chickpeas in the same sieve, then pat them thoroughly dry with paper towels.
3
Cut any large cauliflower florets into bite-size pieces on the cutting board so everything crisps at the same pace.
4
As soon as the rice boils, cover, reduce heat to low, and simmer undisturbed for 12 minutes.
5
Preheat the air fryer to 400 F for 3 minutes.
6
While it heats, toss the cauliflower and chickpeas with tamari and oil in a large bowl, then sprinkle over cornstarch and toss until every piece wears a thin, even film.
7
Spread everything in the preheated basket and air fry at 400 F for 16 to 18 minutes, until the cauliflower edges turn deep golden and the chickpeas rattle crisply.
8
While it cooks, halve the lime, cut one half into wedges, and finely grate the garlic.
9
Whisk the peanut butter, tamari, maple syrup, grated garlic, juice squeezed from the lime half, and warm tap water in a small bowl until smooth and pourable.
10
Halve the cucumber lengthwise and thinly slice it into half-moons, then chop the cilantro and roughly chop the peanuts.
11
Halfway through, shake the basket firmly so the pale sides of the cauliflower turn up to the heat.
12
Once its 12 minutes are up, pull the rice off the heat and let it steam, still covered.
13
Fluff the rice with a fork, divide it between two bowls, and arrange the carrots and cucumber alongside.
14
Pile the crispy cauliflower and chickpeas over the rice, drizzle with peanut sauce, and scatter the peanuts, cilantro, and lime wedges on top.
