Ingredients Tap to check off
Instructions
1
Rinse the quinoa in a fine-mesh strainer until the water runs clear, then combine with water and a pinch of salt in a small pot over high heat.
2
While the quinoa water heats, drain the chickpeas into the same strainer and rinse them under cold water until no longer foamy.
3
Set a 3-quart saucepan over medium heat with the olive oil to warm.
4
While the oil warms, dice the yellow onion.
5
Add the diced onion and a pinch of salt to the shimmering oil, cooking 5 minutes, stirring often, until soft, translucent, and golden at the edges.
6
Once the quinoa boils, cover tightly, reduce heat to low, and simmer 15 minutes until the water is absorbed and the grains show little white tails.
7
While the onion softens, slice the carrots into thin coins, quarter the dried apricots, mince the garlic, and finely grate the ginger on a microplane.
8
Stir the garlic, ginger, tomato paste, cumin, paprika, turmeric, and cinnamon into the onion, cooking 1 minute until fragrant and the paste darkens to brick red.
9
Add the carrots, apricots, rinsed chickpeas, diced tomatoes with their juices, and water, then raise the heat to high and bring to a boil, about 3 minutes.
10
Reduce heat to medium-low, partially cover, and simmer 12 minutes, stirring now and then, until the carrots are fork-tender and the apricots turn plump and jammy.
11
While the stew simmers, finely chop the cilantro, halve the lemon, and cut one lemon half into wedges.
12
Once the quinoa has absorbed its water, pull the pot off the heat and let it steam, covered, until serving.
13
Stir the remaining salt into the stew, then fold in the spinach for 1 to 2 minutes until wilted and dark green.
14
Off the heat, squeeze the juice from the uncut lemon half into the stew, stirring until it tastes bright and balanced.
15
Fluff the quinoa with a fork, spoon the stew over it, and finish with a drizzle of olive oil, the chopped cilantro, and lemon wedges.
