Garlicky Filipino Chicken Adobo with Jasmine Rice & Green Beans
Ingredients Tap to check off
Instructions
1
Combine the jasmine rice, water, and salt in a small pot, cover, and bring to a boil over high heat.
2
While the rice heats, smash and peel the garlic cloves, then snap or trim the stem ends from the green beans.
3
Once the rice boils, stir once, reduce the heat to low, cover, and simmer 15 minutes until the water is absorbed.
4
Set a 12-inch skillet over medium-high heat.
5
While the skillet preheats for 2 minutes, pat the chicken thighs completely dry and season both sides with half the black pepper.
6
Swirl the oil into the hot skillet and lay the thighs in smooth side down in a single layer.
7
Sear undisturbed for 4 to 5 minutes until the underside is deep golden brown and releases cleanly from the pan.
8
While the chicken sears, stir the soy sauce, vinegar, remaining water, brown sugar, and remaining pepper together in a liquid measuring cup.
9
Still during the sear, thinly slice the green onion and red chili on the board and set them aside for garnish.
10
Flip the thighs and scatter the smashed garlic around them, cooking 1 minute until the garlic sizzles and turns pale gold.
11
Pour in the adobo sauce and let it come to a boil without stirring, so the sharp vinegar edge cooks off.
12
Cover, reduce the heat to medium-low, and braise 7 minutes until the thighs turn opaque and the sauce smells mellow and savory.
13
While the chicken braises, pull the rice off the heat once it has simmered 15 minutes and leave it covered to steam.
14
Scatter the green beans over the chicken, cover again, and braise 5 minutes until the beans are bright green and just tender.
15
Fluff the rice with a fork, divide it between two plates, and use tongs to set the chicken and green beans alongside.
16
Raise the heat to high and boil the pan sauce uncovered 2 to 3 minutes until reduced by half, glossy, and coating a spoon.
17
Spoon the glossy adobo sauce over the chicken and rice, then scatter the sliced green onion and chili over the top.
