Instructions

1
Set a 12-inch nonstick skillet over medium heat to warm while you prep.
2
Split the buns and toast them cut side down in the dry skillet 1 to 2 minutes until golden, then set them on two plates.
3
Halve the avocado, remove the pit, and scoop it into a small bowl, then halve the lime and mash the avocado with half its juice and a pinch of salt.
4
Squeeze the other lime half into a large salad bowl, whisk in some of the oil and a pinch of salt, then halve the tomatoes and pile them on with the greens, without tossing.
5
Finely dice the red onion and mince the garlic.
6
Rinse and drain the beans in a colander, pat them dry with paper towels, and mash them in a medium bowl with a fork, leaving some whole.
7
Beat in the egg, then mix in the panko, onion, garlic, cumin, smoked paprika, the remaining salt, and the pepper until it holds together.
8
Shape the mixture into two 0.75-inch-thick patties, pressing the edges smooth so they hold together.
9
Turn the heat to medium-high, add the remaining oil, and lay in the patties, cooking undisturbed 5 minutes until a deep brown crust forms.
10
Flip gently with a fish spatula and cook 4 to 5 minutes more until crisp and the centers are hot and set (160 F / 71 C).
11
Spread the avocado over the bottom buns, add the patties, and close the burgers.
12
Toss the salad and serve it alongside the burgers.
